There are several trails that will eventually qualify as the “Mecca trails”, including the Northern Rivers, Monaro and New England Rail Trails, but unfortunately, none of them are in Sydney (unsurprisingly).
I think most of those rides are great for locals but they are not iconic like Sydney Harbour, Darling Harbour, Parramatta River and the safest spot of all Olympic Park. .

No need to look to Europe, closer to home in Melbourne they have the Capital City Trail which is a collection of individual trails, but it’s a clearly marked city loop that squeezes most of the city’s sights and neighbourhoods in a 2-3 hour ride and was easy enough to follow for someone new to the city.
Sydney completely lacks something even as simple like this, yes there are bike trails but none are connected, most just end abruptly or force you on to main roads and there no marked loops or dedicated tourist trails.
In South Korea they have a dedicated cross country bike trail which adds the novelty of a passport and stamp collecting to get a medal. We’re actually holidaying there to do this specific trail.
Imagine if Sydney had something like this that was easily marked and accessible with our world class harbour.
I did think of this trail. It is fairly well known. You could do Rozelle Greenway cooks but the area from the airport to Waterloo Bourke St is murky. Anyway city to Parramatta is mostly about having a terrific commuting trail that goes up the rivers, past 4 metro stations and opens up the terrific cycling at Canada bay and Olympic Park.
I like to take friends on a non-official city loop that that goes through the Inner West, Airport, City, Harbor Bridge cycle way and back over the harbor via ferry from McMahons point to Balmain then through to the Bay Run, GreenWay and along the Cooks River cycle path and back to the Inner West. I beleive it ticks most of the city's attractions and links most of our major cycle ways and explores our inner fringe neighborhoods but you do have to know your way around the backstreets and alleyways. I like to think of it as Sydney's Capital City Trail.

If they ever get the ferry running from La Perouse to Kurnell there will be a great loop possibility around Botany Bay.
Parramatta to Maroubra and Kurnell just about possible now via Olympic Park, Powell’s Ck, Cooks River and Botany Bay.
Windsor to Wisemans for the more adventurous, on the mighty Hawkesbury, though not on a path.

Yes you do. There is one in BC called the Kettle Valley trail. It is all wilderness and scenic, but one can ride between motels or hotels.
The highlighted example is a actually a permanent user friendly version off Spring Cycle, an event held once a year in Sydney.
